Billy Kounoupis
Owner & Co-Founder
Billy Kounoupis, born and raised in Easton PA, is the owner and creative force behind Billy’s Downtown Diner, with over twenty years in the restaurant industry, Billy is no stranger to the art of customer service, efficiency, and business strategy. His restaurants are an extension of the communities that they are located in. His slogan ‘Not Your Ordinary Diner’, is the best way to describe the fare at Billy’s which puts the ‘comfort’ in ‘comfort food’. Billy’s restaurants have become a staple and family favorite in the Lehigh Valley. Billy is also an avid writer, published author, and entrepreneur, well versed in uplifting audiences and motivating people to pursue their goals and ambitions. He has published three books and is currently writing his fourth. In his latest book ‘The It Factor: The Mindset of an Entrepreneur’, Billy presents a thought-provoking look into the mind of a successful entrepreneur. He has appeared on many campuses and television shows in the Lehigh Valley, sharing his thoughts on success and the restaurant industry. The book, chock full of practical advice from the seasoned business veteran and owner, is a testament to his continued dedication to improving oneself and thriving in both trade ventures and personal endeavors.

Dr. Ben Litalien
Chief Development Officer (CDO)
Ben has invested over two decades in the franchise community, with a broad range of management and franchise-building experience. His specific strengths are in strategic planning, organizational development, concept management, and franchise system growth. He has developed and implemented strategic plans for a diverse group of companies including a major oil company, quick-serve concepts including a sandwich and catering franchise, and a national franchiser of food court cafes. Under his direction and management, he forged significant expansion in the United States and abroad, as well as increasing brand awareness and improving profitability. Ben earned his Doctor of Management degree at University of Maryland, Global Campus where he also teaches business courses focused on entrepreneurship, franchising, and strategy. Additionally, Ben teaches a Franchise Certificate Program at Georgetown University and the University of Denver.

Panayioti Kounoupis
Director of Franchise Support
As Director of Franchise Support at Billy’s Downtown Diner Franchising, Panayioti plays a central role in driving the brand’s growth and operational excellence. A graduate of Penn State University’s Smeal College of Business, he brings a solid foundation in business development, finance, and strategic operations to the organization. Panayioti has been instrumental in building the systems and documentation that ensure consistency, efficiency, and scalability across all franchise locations. His work focuses on creating robust operational strategies, enhancing training programs, and providing ongoing support to franchisees—laying the groundwork for long-term success and sustainable expansion. With a passion for structure and a commitment to excellence, Panayioti continues to strengthen the franchise model and support the future of Billy’s Downtown Diner as it grows into new markets.

Yanna Kounoupis
Co-Founder
Born and raised in Athens, Greece, Yanna Kounoupis moved to the United States in 1982 to study Political Science and French at Moravian College. With a natural love for people and a passion for food and hospitality, Yanna’s vision has been central to the growth and spirit of Billy’s Downtown Diner. In 1999, Yanna and her husband Billy opened their first location, and it was Yanna who named the restaurant—creating a brand that would become a local favorite. Since then, she has remained a driving force behind its creative direction, branding, and guest experience. Yanna loves being part of the creative process and takes pride in seeing both the journey and the final product come to life. She’s deeply committed to the community and values the strong connections built with guests and team members alike. Outside the diner, Yanna enjoys traveling and spending time with their three children but she always finds her way back to the heart of what she helped build.

John Jaindl Senior Advisor & Equity Partner
John Jaindl is a dynamic entrepreneur with a deep-seated passion for farming and a keen eye for business opportunities. Raised amidst the fertile fields of Jaindl Farms, he developed a profound appreciation for agriculture and the importance of sustainable farming practices from an early age. Driven by his entrepreneurial spirit, John sought to leverage his farming expertise to explore new avenues in the business world. With a knack for spotting potential and a hunger for innovation, he embarked on a journey that would lead him to unexpected partnerships and exciting ventures. It was through a mutual friend and family member that John crossed paths with Billy Kounoupis, a visionary in the restaurant industry. Drawn to Billy’s creative use of fresh ingredients, commitment to exceptional customer experiences, and innovative business model, John quickly formed a strong bond with him. As their friendship blossomed, so did their business partnership. Recognizing John’s invaluable business experience and instincts, Billy invited him to become a partner in Billy’s Downtown Diner. With John’s strategic vision and Billy’s culinary prowess, they set out to elevate the diner into a franchise that would revolutionize the dining experience. Together, John Jaindl Sr. and Billy Kounoupis embarked on a journey fueled by passion, friendship, and a shared commitment to excellence. Their partnership serves as a testament to the transformative power of collaboration and the endless possibilities that arise when two visionaries join forces.

Fred Pierson FMP, PCI, CWP, PCQI
Director of Food & Beverage
Fred founded Tennessee based BNA Restaurant Advisors, a food service consulting firm, in 2011. Prior to that, he was President and Franchisee of a 21-unit Applebee’s franchise in TN & KY. He also held various culinary and management positions at Hyatt House Hotels, Morrison Inc, and Chef’s International. Fred is a veteran of the U. S. Navy and U.S. Coast Guard Reserve and was educated at Cornell University-School of Hotel Administration, The Culinary Institute of America in Hyde Park, NY and St. Helena, CA and is a graduate of Georgetown University’s Franchise Management Program. Fred resides in Nashville, Tennessee with his wife Ronna, their Golden Retriever, Goldie, and American Tabby, Izzy.

Dr. Rocco Rinaldi
Franchise Training & Support
Rocco has over two decades in entrepreneurship and franchising, with a wide breadth of experience in strategic management, brand-building, and leading field support teams. His strengths are in operational leadership, brand management, concept development, strategic planning, and franchise systems growth. Aside from coaching emerging franchisors he teaches business courses at two local Universities in Delaware. Inspired by famous running legend Steve Prefontaine, who said, “To give anything less than your best, is to sacrifice the gift” Rocco sincerely tries to bring out the best in everyone he coaches and teaches.

Rebecca Church
Director of Franchise Marketing
Rebecca is an award-winning entrepreneur and a network growth expert with a passion for community engagement. With her decades of experience in the beauty and wellness industries she has developed integral relationship building skills, innovative clientele growth strategies, proven sales techniques and a repeatable, impressive system for creating and building brands. Her goal is to help those around her achieve their optimal potential and has had the pleasure of working with elite franchise organizations such as fit20, BNI and Zerorez. Rebecca and her husband, Patrick, own Malawi’s Pizza, a fast-casual restaurant, in Fredericksburg, Virginia and are parents to 9-year-old Benjamin and a German Shepherd-Akita mix, Lucky Rose.
Jeff Waite

You are never a bother, brother.” That’s the kind of warmth, loyalty, and camaraderie Chef Jeff brings to Billy’s Downtown Diner every single day. Chef Jeff began his culinary journey at Billy’s in 2019, bringing with him a deep passion for food. From his very first day in the kitchen, he has embraced his role with enthusiasm and purpose—cooking with heart, helping craft inventive dishes, leading his team with confidence, and mentoring others with patience and inspiration. His dedication to excellence and innovation has helped elevate the Billy's experience, making him a beloved figure among both staff and guests. A proud U.S. Army veteran, Jeff served from 1986 to 1992, including time in the elite 5th Special Forces Group.
Dominica Defrancesco
Training General Manager
Dominica DeFrancesco joined Billy’s Downtown Diner on April 10th as the General Manager of our Easton location. With 27 years of experience in the hospitality industry, Dominica brings a wealth of knowledge and expertise to our team. Her exceptional communication, organizational skills, and creativity have been instrumental in driving our growth since 2023. Beyond her professional dedication, Dominica values quality time with her family. She enjoys fishing, camping, traveling, and embracing new experiences that create lasting memories. A true fan of Billy’s Downtown Diner, her favorite dish to enjoy is the Panos Omelette. Dominica’s passion for hospitality and commitment to excellence make her an invaluable part of the Billy’s Downtown Diner family.
Rebecca Druker
Training General Manager
Rebecca Druker joined Billy’s Downtown Diner in June 2019, starting as a server at our Allentown location. Her ambitious demeanor and dedication to excellence quickly earned her a promotion to manager, and she eventually took on the role of General Manager at our Bethlehem location. With 30 years of experience in the hospitality industry, Rebecca brings a wealth of knowledge and a passion for delivering exceptional guest experiences. A graduate of Kutztown University with a Bachelor’s degree in Secondary Education and English, Rebecca is a natural leader and teacher. She takes great pride in mentoring her team, fostering a strong focus on customer service, and is excited to contribute to Billy’s continued growth and success. Outside of work, Rebecca is a devoted wife, mother of three, and proud grandmother of two. She loves spending quality time with her family and, when the opportunity presents itself, enjoys indulging in her favorite dish at Billy’s—the Berry Krunch. Rebecca’s commitment and enthusiasm make her an invaluable part of the Billy’s Downtown Diner family.
